Green Bean Casserole
 
1 cup chopped red onions
¾ cup fine dried bread crumbs
2 teaspoons vegetable oil
4 slices thin, lean bacon
1 can reduced-fat condensed cream of mushroom
soup
½ cup gat-free plain yogurt
½ teaspoon fat-free liquid smoke
1 (4-ounce) can sliced mushrooms, drained
3 (9-ounce) packages frozen French-cut green
beans, completely thawed
 
Heat oven to 375 degrees. Coat a 9 by 13 inch baking dish and a cooking sheet with cooking spray. In a medium bowl, combine onions, bread crumbs and oil. Spread on cookie sheet and coat with cooking spray. Bake 12 to 15 minutes or until golden. Remove from oven and set aside.
 
Meanwhile, cook bacon; cool and crumble. In a large bowl, mix together soup, yogurt, liquid smoke and mushrooms. Stir in beans and bacon. Spoon into baking dish; top with onion mixture. Bake about 45 minutes or until bubble.
