| Rockfish Fillets Kinship |
| 1 pound rockfish fillets |
| 4 tablespoons butter, softened |
| 1/2 cup slivered almonds, chopped into smaller pieces |
| 1/4 pound fresh mushrooms, chopped into small pieces |
| Juice of 1/2 lemon |
| 2 tablespoons chopped fresh parsley |
| 1/2 cup of dry white wine or water |
| Sale, pepper and Lemon pepper to taste |
| Place fillets in a well oiled pan & season with salt and pepper. Combine softened butter, chopped almonds, chopped mushrooms, lemon juice and parsley to form a paste. Season with salt, pepper and lemon pepper. Add white wine to pan. Spread paste evenly and rather thickly over fillets. Bake in a 450 degree oven for 15 minutes. Serves 4 |
